STM32CubeIDE 1.6.0 was released this week on st.com as well as a in-tool update patch.
Caution: The in-tool update does not allow updating drivers and ST-LINK server tool. Full installer is required for this.
What is new in 1.6.0? (only some highlights)

What is your OS?
Also could you share you workspace log file workspace/.metadata/.log to see if something guides us to the root cause?

Thanks for sharing. In the light of such could you have a try starting a new IDE session but electing a brand new repository as workspace ? (possibly then just perform File > Open Project From File System to get bqck within such fresh workspace one of your project). I've feeling we have to exclude local corrupted workspace option here.
Please share back outcomes.

I'm sorry, I don't want to spend more time solving this. I want to work on my project so I installed 1.5.1 which works without problems.
