Good news :smiling_face_with_smiling_eyes: I am pleased to inform you that this issue is fixed in the latest STM32CubeMX version 6.3.0.
Now, CubeMX is showing the correct oscillator input limits matching values in the datasheet :

Are you running at nominal voltage with sufficient decoupling capacitors?

@Uwe Bonnes Yes that is my plan. At the moment I'm searching for the right STM32H7 controller / package.

Normally, DS is the authoritative information source, so you can ignore any constraints of CubeMX or any "library".
