I have a STM32CubeMX project using STM32F303VDT6 MCU. I can't get that MCU at this time and I need to switch firmware support to STM32F302VET6 MCU. Is there a way to switch MCU projects without having to reenter all my pin configurations again?

I recommend you to refer to this UM1718 for easy exporting of current configuration to a compatible MCU.

You can follow the instruction in the section "Tutorial 5: Exporting current project configuration to a compatible MCU".
