Which version would that be? Wouldn't it be limited by the installable version of Java?

As recommended by Clive, it will be better to update and use supported OS (Windows® 7, Windows® 8 or Windows® 10) as mentioned in the UM1718.

You can download the last version of STM32CubeMX tool from ST web page:

https://www.st.com/content/st_com/en/products/development-tools/software-development-tools/stm32-software-development-tools/stm32-configurators-and-code-generators/stm32cubemx.html

Please follow the instructions and requirements in the User Manual UM1718 to install and use STM32CubeMx tool.
