You mean the table with over 1300 entries?
You may select the MVU based on the requirements in STM32CubeMX/CubeIDE - just start creating a new project and the list of all STM32 MCUs will be displayed.

Not every chip is available on a board.
Perhaps create a custom one, you'll be less bounded.
