Yes you can, but NUCLEO-H753ZG is cheaper ;).

This is just a typo from my college @SofLit .
For the H753/H723, H is the Product type with H = High performance and 723/753 is the device subfamily. You can find it explained on the Ordering information of each datasheet of an MCU.

For the naming of the MCU, PLease refer to the Ordering information chapter of each MCU on a board. For the price it should be normal since the STM32H7S3 is the newest product on the STM32H7 Familly (just released on march 2024).

SAR ADC in STM32H7S3 has ONLY 12-bit.
SAR ADC in STM32H753 has 16-bit.
We need 16-bit.
