Of course you can buy it separately, here for example.

Also, that question doesn't concern TouchGFX, so please try to change or add more tags next time you are creating a new post please ;)

The display can also be bought separately from Mouser or Digikey, for example, but it is only slightly cheaper than the complete X-NUCLEO-GFX01M2. That's why @Yoann KLEIN​ suggested the URL to buy a complete X-NUCLEO, which is definitely the easiest option.
