Could you explain what you are looking for exactly or what your issue is exactly ? TouchGFX is not set in the Middleware section of STM32CubeMX but in the Software Packs. It needs to be first enabled by going to the Select Component tab. Have a look at the Generator User Guide article in the documentation to understand how to enable and setup TouchGFX with STM32CubeMX.
You can also start from TouchGFX Designer by selecting the STM32F769 discovery board. A fully configured TouchGFX and STM32CubeMX project will be configured.
