Can I cover Vl53l0X sensor with any type of cover for protection from environment?

Using this sensor in medical application due to which I can't install this sensor in open and therefore have to cover it with some material which will not harm its sensitivity and sensor will also be protected.

Yes, you can. Glass, acrylic, PMMA and polycarbonate are good choices. Most plastics are transparent to 940nm light so this list is not exhaustive.

The trick is that even the best materials are not 100% transparent - and that leads to crosstalk.

Not to worry, though. Read the section on crosstalk correction and you can see how to compensate for it.
