I use a modified GNU binutils as assembler (stm8-as, stm8-ld, etc..) But I dont have the header files where to find info on irq, stack, etc.. to include. I've try to download the ST IDE but it's an Window .exe so impossible to extract those files. Help.

You should be able to get the header files from the STM8 Standard Peripheral Libraries.
