As mentioned by jpo92, for node-red related stuffs , there are plenty of materials available on the web. There is also a very active community discussing and answering questions on the forum : https://discourse.nodered.org/
For more specific STM32CubeMonitior topics, there is no UM available but the wiki (https://wiki.st.com/stm32mcu/wiki/STM32CubeMonitor:STM32CubeMonitor_overview) will be enriched as long as the project goes.

STM32CubeMonitor is based on Node-RED, you can find many tutorials on https://nodered.org/docs/ or http://noderedguide.com/.
Also, Elektor store offers a book on Node-RED (https://www.elektor.fr/programming-with-node-red-e-book).
I don't read this book, but I read another book by the same author which was very dictactitiel.

The information to use the STM32CubeMonitor are in the wiki, there is no "user manual" in book format.
