How do I configure OCTOSPI2 to use a W957A8MFYA in STM32CubeIDE, the settings are not at all clear unless there's a help file that explains the settings somewhere.

Would suggest you look at other board examples using HyperRAM, how those are configure connected, and how the datasheet items from the non-Winbond parts related to those of the Winbond.
Also a review of the OCTOSPI peripheral in the Reference Manual of your STM32.
If you have an ST FAE, perhaps discuss with them about configuration/expectations.
