Is there a particular reason (technical or HAL-driver related) that is behind this non-inclusion of STM32WB5MMG in the list of supported QuadSPI STM32 MCUs?

STM32WB5MMG is a system in package module based on the STM32WB55VG microcontroller with other external components.

The STM32WB55VG is mentioned within the Applicable products table of the AN4760.

You can refer to the STM32WB5MMG Datasheet for more details about the STM32WB5MMG module.
