many thanks for answering the first question.
Are there products with the STM32WB5MMG module that are based, for example, on the reference design shown in application note AN5165 and that can be soldered by hand (similar to the ESP32 modules)?

For a design based on the STM32WB5MMG, there is not any resources such as the resources of the AN5165. But the STM32WB5MM-DK board is based on this product. You may use the design of this board as reference design.
