We have been using STM32F0x, STM32F30x and we read an ADC channel to get the temperature.
we would like to know on-chip Temperature Sensor Responding Time. (How fast does the sensor respond to the temperature change?)

I guess it measured a junction temperature, so it is nearly immediate, and varies with chip power consumption. Package has thermal inertia, so are the pcb soldering and any heater copper. Maybe considering the internal sensor for ambiant temp measurement should use true external sensor. Did you know smartphones cannot measure ambiant temperature for similar reasons?

Does STM have the number on 'How fast does the sensor respond to the junction temperature change'?

response to the junction temperature change is in ms - range, because sensor is also junction on the chip. so if chip gets 1° more hot or cold, you see it on next moment/measurement.

To be accurate, you measure the instant temperature of a specific point on the rectanglr silicon chip. Intel has several sensors especially in multi core chipsets.
