ST states that the STM32F730R8T6 has Quad SPI, but it is missing QUADSPI_BK1_IO2 on the pinout?!?!

This just means that the Quad-SPI peripheral (see ch. 13 in RM) is present, it does not imply that all pins required for full functionality are bonded out. For the F730R8T6 the functionality is limited to 1-line due to pin count restriction.

On the 64-pin device you might be limit to the DUAL mode operation. Going to impact bandwidth, but the F7 has caching which will mask a lot of that.
