I want to use a STUSB4500LBJR for USB-C power delivery. On the datasheet stands that connecting the I2C lines is optional and in another datasheed of the STUSB4500 stands that I don't have to use a microcontroller. But I cannot find information about choosing a voltage output I want from the STUSB4500 on the internet.

take care that STUSB4500LBJR is Type-C only for 5V, up to 3A applications.
STUSB4500BJR is USB-C + PD capable (up to 20V, 5A):
If you need to change STUSB4500 power profiles, 2 options:
1°) customize once the Non Volatile Memory (check this software package: STSW-STUSB004)
2°) or do it on the fly from your application MCU: STSW-STUSB003
