Im planning to build a device for multi channel analog signal conditioning and interfacing to a computer through ethernet. Please advise on the suitable microcontroller kit, that I can work on. It would help if you can advise on a 16bit 8 channel ADC.

16 bit requires sigma delta adc category, so use mcu finder and filter them out. SAR common adcs are 12bits asymptotically.
