General Purpose MCU tend to have specific disclaimers about use in Airplane, Military, Space and Life-Critical applications.

For obvious reasons parts meeting MIL-Standards tend to be significantly more niche and expensive, not least to support all the expectations that come with that.

Many vendors have specific divisions operating within such market spaces, perhaps look at those advertising in trade magazines, and attending trade shows..
