I want to stuff the extra connectors so that I can plug the nucleo onto a backboard, but I want to make sure that they are the same length.. I have been unable to find what appear to be compatible connectors in stock anywhere?.
This has to be a frequent need but I have just been unlucky at finding the information.

There should be a BOM under the CAD Resources tab.
The receiving pins would just be double wide 0.1" strips in a handful of lengths. Sort of stuff you can get at samtec in thru-hole or SMD forms.

I've looked through some of the BOM's but the post numbers that I found didn't seem to match the dimensions of the installed headers.
What I am looking for is not mating pins, but the same extended post headers used on the default stuffed connectors. (Nucleo-144) comes with 4 connectors stuffed, but 2 additional outer rows that can be stuffed to expose many more signals. I would like to find matching connectors so the pins out the bottom all contact at the same point and the headers on the top all share the same plane and have matching contact points. We are using these in some test fixtures for inhouse designed STM32 parts and want to make things as simple as possible.

I looked on my Nucleo L5 BOM ( https://www.st.com/resource/en/bill_of_materials/mb1361_bom.zip )
and found some Samtec SSW-1xx-23-x-D.
The datasheet is here: https://suddendocs.samtec.com/catalog_english/ssw_th.pdf
and the "23" in the part reference indicates some low insertion force 10mm pins

Might be custom order, where the x is flexible. Perhaps talk to you local ST FAE, or SAMTEC

For the NUCLEO-144 boards, check out Samtec TSW-135-09-G-D. It has the same long pins as the NUCLEO-64 boards. Style "09" defines pin length:
5.84mm (.230") above connector
2.54mm (.100") connector itself
10.16mm (.400") under connector
Assuming board thickness of 1.78mm (.070"), length of pin under the PCB would be 8.38mm (.330")

Are you looking for connectors with the female/male connectors like the Arduino connectors? Or some male/female SIP headers for the morpho connection pins?

The NUCLEO-144 pin boards do not have the CN11 and CN12 morpho connectors populated. I have been looking for parts to populate these "missing connectors". I really like the morpho pins on the Nucleo-64 boards, allowing me to connect parts to the top side and attach instruments to the bottom side of the board. The BOM for the Nucleo-64 boards indicates a "Lyconn 313238S161185", but this part is hard to locate. The Samtec TSW-135-09-G-D appears to be a close match.

The 38 pin 2x19 aren't a popular format, ie non-stock / special-order
Pololu had TI-RSLK MAX headers https://www.pololu.com/product/3676
I've used these for fixturing QSPI Flash adapters, etc.
The Arduino Mega 36 pin 2x18 can be staggered in a pinch, and have higher availability.
The unpopulated headers on the NUCLEO-144's likely aim for direct wire soldering, or 0.1" pitch socket/headering of your choosing, I'm guessing not populated due to high BoM costs, and the mating/removal forces being quite high.
Amazon often has assorted options, including some break-to-length sockets and headers
