Hello,

Is there an official source listing all evaluation, discovery, or development boards based on STM32H5 MCUs?

Go to the STM32H5 family page, and look on the 'Tools & Software' tab:

Them click on 'Product evaluation tools'

There's also a 'Product Selector' tab on the Nucleo Boards page:

https://www.st.com/en/evaluation-tools/stm32-nucleo-boards/products.html
