is there any documentation out there that tells how much power is being consume when the bluetooth operates?
and if the power consumption is affected whether the Device is running on RUN mode or STANDBY mode.
If there are any tips that can make reduce the power consumption without sacrificing too much performance

Yes. For BlueNRG-2 please refer to datasheet section 9.1 for current consumption of different components and the radio with different transmission power configurations.
Also, the (STSW-BNRG001) BlueNRG current consumption estimation tool can help you predict the BlueNRG's current consumption under different conditions.

Usually the Bluetooth device datasheet tells you this information, some designs are more power efficient than others. Same as for any electronics.
