Using a MCU with 12-bit ADC to collect data from 24-bit sensor?

I want to use a STM32WB55CG with a 12-bit ACD to collect sensor data from ADS1292R (24-bit ECG sensor) and MAX86150 (19-bit PPG sensor). Short question: Is this possible? If so: Any suggestions on how to do so? Do need some external component?

How do I check if an I/O pin is high or low (state of the pin)? When I toggle pins I want to know what variable to check.
