Hello Team,
We are developing custom board using STM32N657X0H3Q MCU. I could not find information regarding GPIO status in datasheet during boot mode, sleep mode, stop mode and standby mode. It will be helpful for us if you can share information with us.

The STM32N6 includes a BootROM that is executed after reset, refer to 9.1 Boot after system reset in RM0486.
The GPIOs used by the BootROM are listed in section 3.12.3 “Configuration of ports and pads” of UM3234.
As for the GPIO registers that are not used by the BootROM, they remain configured to their default values (reset values), as explained in section 15.4 “GPIO registers” of RM0486.
For all low-power modes, please refer to the end of Table 55 “Functionalities depending on system operating mode” in RM0486.
