We are developing a PMSM motor drive for an industrial application. This application is for Sugarcane Juice machine where we require to provide instant high torque for a shorter duration.
I have developed a PMSM drive using the STSPIN32F0 controller. Drive is able to provide some 14 Amp loading for a small or a medium sized sugarcane on the motor instantly. But incase of a thicker sugarcane it may be requiring more Amps. But at that time, controller speed reduces significantly and gives a Speed Feedback or OverCurrent faults.
Motor parameters:
Pole Pairs: 2
Nominal Voltage: 36V
Max Current: 25A
Nominal Speed: 1400 RPM
Rs: 0.48 Ohms
Ls: 2.5 mHenry
Bemf Constant: 17 KRPM/Vrms
Control Technique: 3 Shunt Sensorless FOC

Disable over current ;) Or make it something your comfortable with.
You would want Torque since speed isn't exactly your concern.
The rest i'm still struggling with myself.
