Hello, I'm working on an STM32F767zi board and want to monitor the power consumption of the MCU using the X-NUCLEOLPM01A. I follow the instructions in the board's documentation to turn off the SB112, which is turned on by default. Can somebody tell me how to go about doing this?

Hi @Aqsa,
SB means solder bridge. You need to remove the 0R resistor from the SB112 position.
It's best done using a soldering iron.

Is there an alternative to soldering, such as utilising wires to ground?

There are alternative solutions like electrically conductive stickers or glues, but I would not recommend those. A bit of soldering is easy enough for anybody.
