I have CubeIde 1.61 installed on Win10/64 hard disk. About box/dialog says it is version 1.61, that is, the current version. Desktop icon or shortcut says it is version 1.40 or something. That is the original version number I installed sometime ago and then later updated.
I can change the name easily, so that is not the problem. Perhaps the shortcut should only be named CubeIde?

This is a known issue. TL;DR not a bug, won't be fixed.
Instead, to know what is the true version (besides the About dialog), open the file stm32cubeide.ini in the CubeIDE dir.
Look for line like:
-Declipse.buildId=Version 1.6.0
This gives the actual version.

Polluting the user's Desktop and other private folders with shortcuts is actually a leftover from 90s, when it was "cool" to pollute everything with a zillion toolbars, pop-ups, shortcuts and whatnot.
