The STM32F407G-DISC1 board has an inductor L1 'fcm1608-0603' for power supplying purposes but the value does not appear, which is its value?

That component is not used as an inductor. It's a ferrite bead and meant to suppress certain frequencies. If you don't care about passing EMC tests you can use a short instead.
