I agree with you about the misleading dummy cycles, and this will be fixed in future Reference Manual revisions.

I recommend to take a look to the latest OCTOSPI App Note describing the new OctoSPI features: like the Multiplexed mode that enables interfacing TWO Octal SPI memories over ONLY one 8-bit data interface (using only 12 pins)...
