It is possible to do it by modifying or reusing JSON setting files which are part of the STSW-STWINKIT01 SW package allowing to configure, enable, disable particular sensors. It is also recommended to read UM2688 (High-Speed Datalog firmware for STEVAL-STWINKT1) @ st.com
