Hello

Is there anywhere a satisfactory description for the existing interrupts and there sources defined at stm32f4xx_dma.h?

You mean the 5 different interrupt sources for each stream, as listed in ch.10.4 of RM0090?

They are described throughout the whole DMA chapter.
