I am starting a personal project where I will be designing custom hardware and software for a device that would be be similar to a smartphone. I want it to be able to connect bluetooth, wifi, have speakers and use USB-C(power, data transfer, etc.). I was thinking that it might be a fun challenge to try to use a STM32 microcontroller for the project. I have not selected any parts yet but I want it to be power efficient, able to interface with a touch screen and be around the size of a smartphone. Does anyone have ideas of which STM32 products I could look into for this project?

Better start from a platform capable to run a decent OS: Raspberry Pi or iMX or better. But it depends on your definition of fun.
