Let's estimate some figures:
In the datasheet you'll find a maximum supply current of 2mA @ 5.5V and 1MHz = 11mW.
This power would lead to a temperature difference of 2.2K if we assume a (really, really bad) value of 200K/W.
Reading the whole content of a 2Mbit EEPROM at 1MHz would take about 3s or so, after that it typically goes to standby with max 40µA = 220µW, which then generates a negligible increase in temperature.
The absolute maximum ambient temperature according to the data sheet, table 5, is 130°C, and according to the operating specification (data sheet, table 7) it is 125°C. Since the maximum temperature difference is in or even below the single-digit range, the junction temperature can be equated to the ambient temperature.
Have you got any good reason that someone provides the exact thermal resistance of such an EEPROM?
