I am trying to determine the performance/output of the H3LIS200DL in a non-laboratory environment. Does anyone have information on this?

Due to Quarantine I don't have access to tools where I could hook up this accelerometer and study its response and offset. So I'm reaching out to see if anyone has any information on how this accelerometer performs when it's not in a controlled lab setting. Specifically what the offset would be and how noisy the output signal is. I couldn't find any information on this in the resource material on your site.

Hi @AStro.1 , not sure if I well understood your request... The typical parameters you are searching for (noise and offset) are reported in the H3LIS200DL datasheet. If the device is placed in the "environment", it will detect the environmental signal or noise, but please note that the device is a high-g accelerometer, and for this reason it is not much sensitive to standard environmental accelerations.
