Is there a TOF sensor that can measure the distance of the key pressed in a standard PC keyboard? If there are multiple such sensors on the left and right side of the keyboard?

I had a guy from a laptop manufacture ask me that. I tried it. But unfortunately the geometry does not work out very well. Fingers are too close, together and it's hard to 'see' the actual press as opposed to just placing the finger over the key.

I also have a friend that types really, really fast.

I don't think the sensor could go fast enough to see that.

I more thought of it like this (red is the sensor beneath the keyboard top cover, inside the keyboard case):
