Looking for an example where pairing exchanges keys for a secure connection. Or a book, somewhere someone should have written a book.

I suggest you have a look at the STM32WB-WBA BLE security - Out Of Band pairing - stm32mcu Wiki and also the 4 examples provided on the reference chapter of the wiki. They should be helpful.

I am pretty sure that I don't want to do out-of-band pairing. Might have terms wrong by "LE secure pairing" the one that is not "just works" could be what I am after. Need to figure out HCI exchange that would be expected on each side.
