We are looking to build an STM32-ethernet interface and need some reference material to start with. It appears the STM32F107 is the available ethernet solution, correct? Are there any reference schematics or example content available to get started with here?

Don't use F1 parts for new designs, pick something newer
Review the STM3210C-EVAL schematics
https://www.st.com/en/evaluation-tools/stm3210c-eval.html
The EVAL series boards usually have a full set of peripherals, many of the new NUCLEO-144 boards have Ethernet (F205, F429, F746, F767)
