The DSP libs used to contain similar examples, at least those shipped with the SPL.
Don't know about Cube, might be there as well.
They are usually found in ...<package>\Libraries\CMSIS\DSP_Lib\Examples
I cannot find an exact arm_correlate example in mine, but perhaps you can modify a similar one.
