STM32L15xxx has integrated LCD controller which has a built-in LCD voltage generator that allows you to drive up to 8 multiplexed LCDs with contrast independent of the supply voltage.

The STM3210C EVAL board uses a 320x240 panel driven via the FSMC. Uses cyclic DMA as I recall, and the demo uses some commercial graphics library. Depends on how comfortable you are handling bitmap images, or graphic primitives.

Talk to a panel vendor about specific resolutions/requirements. There is one vendor who visits the forum about once/twice a month, can't speak to his panels, but he is persistent.
