I see the ST Edge AI Suite case studies People counting with a ranging sensor. Is there any demo project for that ?

We don't directly have a tutorial for this use case, but we have a tutorial to make a rock scissor paper game using a ranging sensor (time of flight) and Arduino in this case.

If you follow the step described in this tutorial and the use case you linked, you should have everything to succeed:
