First let me welcome you to the STM32 Community :smiling_face_with_smiling_eyes:

Actually STM32CubeMX may stuck at "Copying library files" in case there is a special character in the the Project Location (e.g. "&","ä", "#", ...).

This is a known issue and it was reported internally to be fixed. The fix will be available as soon as possible. I'll surely keep you posted with the updates.

Please check your project location and remove the special character if it exists.
