Hello, i have on my table the STM32L476 Nucleo-64 board and i installed for the first time the STM32CubeIDE. Do i have to install all STM32L4 available MCU package release versions or do i only need the latest version and ignore the older releases?

Just the latest version. If they are incremental, it will download what's necessary.
