Yes OpenSTLinux Weston can be used without GPU.

Using Distribution package if you reject the GCNANO licence agreement during configuration, you will have an automatic fallback to Weston display path not using GPU.

Yes that's it.

Note that further adaptation may have to be done in the boot chain and Kernel Device Tree.

Using STM32CubeMX is recommended to help writing them.
