AN5185 provides a lot of good information on upgrading the FUS, but I don't see the files on the website. Or in any of the STM32Cube_FW_WB_ versions.

You will find it under this path on the downloaded STM32CubeWB firmware package: STM32CubeWB/Projects/STM32WB_Copro_Wireless_Binaries/STM32WB5x/.
You can refer to the Release_Notes.html files for more details on how to use it.
