When using the STMF479, if the MIPI function is not used, can the corresponding pins be left unconnected?

Yes, just leave the corresponding DSIHOST pins unconnected.

However, please note the information in the data sheet (Section 2.18).:

If DSI functionality is not used at all, then:

• VDDDSI pin must be connected to global VDD.
• VCAPDSI pin must be connected externally to VDD12DSI but the external capacitor is no more needed.
• VSSDSI pin must be grounded
