You probably mean the STM32H745I-DISCO with the STM32H745XI?
DCMI (Digital Camera Interface) cannot be used there because the DCMI pins are already occupied elsewhere.
Maybe look at the STM32H747I-DISCO instead, where at least a DCMI with 8bit is available. Alternatively, you would have to develop a board yourself to have full freedom with the peripherals.
