Is there a reason none of the projects for STM32H7B3I-EVAL are available with the cubeMX tool? Can STM provide a project with a better pin editor for this toolchain?

Why do you think it's not supported?

There are 90 examples provided for this board that work with STM32CubeMX.

You can also select the board and use the default peripheral settings to create a new project.
