What is the difference between STM32H753ZIT6 vs STM32H753ZIT6U?

I am curious because the U variant is on the eval card, but is not available anywhere. The non-U variant seems to have replaced it from all vendors.

Had a similar question yesterday, as I understand the U variant is used by ST on evaluation boards, and doesn't pay certain licensing fees that a commercial use case would need too

This could relate to multiple parts on the board, and only needing one IP licence.

The lack of a particular function or interface, negating the need for an IP license in the specific use/implementation.
