How to use ECC for STM32L011G3 MCU to gain flash capacity ?
According to the overview it is possible to get up to 16 kB of flash memory. However I can't find a reference to this.

You misunderstand what's said in the DS.
If you want 16kB FLASH, use the STM32L011G4.
While you may find 16kB FLASH to be present on the 'L011G3's chip, it is untested and not guaranteed to work, and in the future it may be absent or blocked.
