DMA_InitStructure.DMA_Mode = DMA_Mode_Circular; // << Consider Normal

DMA_ITConfig(DMA1_Channel1, DMA_IT_HT | DMA_IT_TC | DMA_IT_TE, ENABLE); // << Consider only enabling the ONE you service, ie TC

DMA_Mode_Circular -> DMA_Mode_Normal -> it works!
